Welcome back readers! 2015 is going to be a great year and I’m so excited to be working on this blog and dedicating more of my time to creating great content…so, stick around!

Today I thought I’d bring you one of my favorite root veggies…the jicama! I don’t really have a great story for this vegetable, except that I saw it at Whole Foods a few years ago, bought it and loved it. Once you buy it, store it at room temp until you’re ready to eat.

You can peel the jicama or use a pairing knife to get the outer skin off. Sometimes I peel it one way, sometimes the other.

Then, dice, chop or julienne!

The texture is similar to if an apple, onion and potato got married and had a baby…but it doesn’t taste at all like an onion! Must be a recessive trait (haha!). It tastes like a less sweet apple with a starchier mouth feel. Have I convinced you to go buy one yet? Try chopping and eating alone or as an easy take-with-you vegetable or mix in tuna or salmon in place of celery for a great crunch. You can add to salads too for a new flavor!
